Addicted to Veggies - Sarahfae

Once upon a time I had a very generous friend, Sarahfae, that created a recipe for a coconut dish when I requested it. She posted it on her blog, I made the recipe, and fell in food love. Unfortunately, I was a huge jerk and didn't ever say "thank you" properly with a gift :(

I decided to say "thank you" with this flamingo apron. When I saw the fabric I immediately thought of Sarahfae because flamingos are her thing! I bought the fabric and made the apron on Monday night.

 Some thoughts on this photo:
1. The black along the border of the apron is gathered, but it's hard to see in the photo.
2. Why is Lebron the cat headbutting the chair?
3. Are you jealous of my Lucky Lucille headscarf?

This fabric comes in a few other colors. I'm thinking that I need to get a couple of yards to make myself a dress....

A new outlook for now and Coconut-Lemon Meltaways

Yesterday I posted a very hateful post because of the heat, so today I will try and be a little more positive.


Last night it was very hot, so the last thing I wanted to do was cook or turn on the oven, but I have a sweet tooth and really wanted a dessert. My favorite food blog, Addicted to Veggies, posted a recipe for Coconut-Lemon Meltaways and I have been dying to try them. The best part is that there is no oven required, hurray! After making them I just popped them into the fridge for an hour and they were ready.


Yum! It was so easy to make and luckily I had all the ingredients at home because many of the same ingredients were used for the Lime in the Coconut Cream Pies I made a while back. Thanks for the recipe, Sarahfae! Luke loved them too!


Speaking of Luke, he got tattooed the other day. His good friend Chris started the tattoo over seven years ago and it has yet to be finished. Tuesday night they made a little progress.


Chris lives in Dallas, so we don't get to see him very often. We want Chris to move home!

What a great weekend! I hung out with my friend Ari, spent time with my family, shopped, and ate good food. I can't complain.

I have posted about my favorite food blog, Addicted to Veggies, a few times now because I am obsessed with Sarahfae's cooking. A while back she made this amazing recipe for me and I finally got to make it myself and it did not disappoint! The Lime in the Coconut Cream Pies were sooo good and I can't stop thinking about them.

Here are the ingredients I ended up buying. From left to right: coconut flour, a young Thai coconut, coconut water (for me to drink, not for the recipe), coconut oil, coconut crystals, and coconut butter. These are all new cooking ingredients for me, but I know I will get use out of them. I even found a recipe for a hair mask using coconut oil here, so it will get used one way or another :)

 I bought and successfully opened my first young Thai coconut. And I did it myself!

The finished product is not even close to being as pretty as Sarahfae's, but they taste amazing and that's what counts, right? The crust  is to die for!

One of my good friends, Brandon , is raising money for Alzheimer's research through art. He is making custom pieces starting at $30. I asked him to make a Cary Grant painting for me and he sent me the photo above within a few hours. I love it and can't wait to hang it up! Thank you Brandon! On Sunday Luke and I drove with my mom and grandma to Santa Barbara. I gave her the quilt and she liked it! I was nervous because she was a very talented seamstress and I am sure my amateur mistakes are painfully obvious, but she seemed very grateful and appreciative. I also got to see my aunt and uncle, who I haven't seen in over a year.

Afterwards we went to downtown Santa Barbara, got lunch at a Hawaiian restaurant, and shopped. I didn't buy much, but Luke found lots of things for himself at American Apparel. It's hard for me to shop because I always think to myself, "I could make that or learn how to make it." Plus clothing can be so expensive that it is hard to justify such a pricey purchase for something I probably won't wear too often.

 Here we are waiting for my mom in Nordstroms.

I have been a fan of the cooking blog/website Addicted to Veggies for some time now. I love the unique combinations of ingredients, the writing style and personality of Sarahfae, and of course eating the food when it is done :)

Less than a week ago I asked Sarahfae if she could make a recipe involving coconut because I am obsessed with it. She came up with this recipe  (see photo above). How amazing does that look???? And how amazing is it that Sarahfae made up that recipe in less than a week? I am in awe of her and all her cooking! Thank you Sarahfae for making my coconut dreams come true!

Today I have done the following:
• went to breakfast with Luke.
• repotted orchids in the house and put my fuchsia in a pot.
• Luke hung up my Topsy Turvy and I planted tomatoes in it. This will be my first time planting tomatoes, cross your fingers for me.
• planted green onions and cat grass.
• cut out 31 rectangles for my quilt (see above right).
• cut and sewed 20 squares (see above left).
• read over 100 pages in my book.
• made the recipe for butternut squash gnocchi from my favorite food website, http://www.addictedtoveggies.com
• watched a disgusting amount of the NBA playoff games.

So far I have had a very busy Easter - and it's not over yet! I just wish I had family to spend it with :(

Tofu in a ginger mango sauce and topped with mango slices. Yum! Speaking of food, I made the Addicted to Veggies green bean casserole last week and it was to die for!!! I didn't take pictures though :( I am still day dreaming about that mushroom topping that barely made it into the dish because I was practically eating it by the spoonful!
